Ingredients

For the Burritos:

  • 1 packet taco seasoning (or homemade blend)
  • 1 cup refried beans (optional)
  • 1 cup cooked rice
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 4 large flour tortillas

For the Sauce:

  • 2 cups red enchilada sauce
  • 1 cup tomato sauce
  • ½ cup beef or chicken broth (optional, for a thinner sauce)
  • 1 tsp chili powder (optional, for extra heat)

Toppings:

  • 1 cup shredded cheese
  • Sour cream
  • Diced tomatoes
  • Chopped cilantro
  • Sliced green onions

Instructions

1. Prepare the Filling:

  • Heat a skillet over medium heat. Cook the ground beef until browned, breaking it into crumbles.
  • Add the onion and garlic, cooking until softened (2–3 minutes).
  • Stir in the taco seasoning and ¼ cup water, letting it simmer for 2–3 minutes.
  • Mix in the refried beans and cooked rice. Remove from heat and set aside.

2. Assemble the Burritos:

  • Lay out a tortilla, and spoon the beef mixture into the center. Add a sprinkle of shredded cheese.
  • Fold in the sides, then roll tightly into a burrito. Repeat with remaining tortillas and filling.

3. Prepare the Sauce:

  • In a saucepan, combine enchilada sauce, tomato sauce, and optional broth. Heat over medium heat, stirring occasionally, until warm.

4. Bake the Burritos:

  • Preheat the oven to 375°F (190°C).
  • Place the burritos seam-side down in a baking dish. Pour the sauce evenly over the burritos.
  • Sprinkle the shredded cheese over the top.

5. Bake:

  • Bake for 15–20 minutes, or until the cheese is melted and bubbly.

6. Garnish and Serve:

  • Remove from the oven and top with sour cream, diced tomatoes, cilantro, and green onions. Serve hot.
