Walking Taco  Casserole Recipe

Here’s a Walking Taco Casserole recipe that’s easy, delicious, and perfect for a crowd!

Ingredients

• 1 lb ground beef

• 1 packet taco seasoning

• 1/2 cup water

• 1 can (10 oz) Rotel tomatoes with green chilies (drained)

• 1 can (15 oz) black beans or pinto beans (drained and rinsed)

• 1 cup corn (canned or frozen)

• 1 bag (9.75 oz) Fritos or Doritos chips

• 2 cups shredded Mexican cheese blend

• 1/2 cup sour cream (for topping)

• 1/2 cup diced tomatoes (for topping)

• 1/2 cup shredded lettuce (for topping)

• 1/4 cup chopped green onions or cilantro (optional)

Instructions

1. Preheat oven to 350°F (175°C).

2. Cook the beef: In a large skillet over medium heat, cook the ground beef until browned. Drain any excess grease.

3. Add seasoning: Stir in taco seasoning and 1/2 cup water. Cook for about 2-3 minutes until the mixture thickens.

4. Mix in ingredients: Add Rotel tomatoes, beans, and corn. Stir to combine, then remove from heat.

5. Layer the casserole: In a greased 9×13-inch baking dish, spread half of the crushed Fritos or Doritos at the bottom. Top with the beef mixture, then sprinkle with cheese.

6. Bake: Place in the oven and bake for 15-20 minutes, until the cheese is melted and bubbly.

7. Add toppings: Remove from oven and sprinkle with lettuce, tomatoes, green onions/cilantro, and more crushed chips.

8. Serve: Drizzle with sour cream and enjoy!

Tips

• Swap ground beef for chicken or turkey for a lighter version.

• Use nacho cheese Doritos for extra flavor.
