Ingredients
• 1 lb ground beef
• 1 packet taco seasoning
• 1/2 cup water
• 1 can (10 oz) Rotel tomatoes with green chilies (drained)
• 1 can (15 oz) black beans or pinto beans (drained and rinsed)
• 1 cup corn (canned or frozen)
• 1 bag (9.75 oz) Fritos or Doritos chips
• 2 cups shredded Mexican cheese blend
• 1/2 cup sour cream (for topping)
• 1/2 cup diced tomatoes (for topping)
• 1/2 cup shredded lettuce (for topping)
• 1/4 cup chopped green onions or cilantro (optional)
Instructions
1. Preheat oven to 350°F (175°C).
2. Cook the beef: In a large skillet over medium heat, cook the ground beef until browned. Drain any excess grease.
3. Add seasoning: Stir in taco seasoning and 1/2 cup water. Cook for about 2-3 minutes until the mixture thickens.
4. Mix in ingredients: Add Rotel tomatoes, beans, and corn. Stir to combine, then remove from heat.
