Ingredients

• 6-8 chicken drumsticks

• 3 tablespoons olive oil

• 2 tablespoons fresh lime juice

• 1 tablespoon apple cider vinegar

• 2 teaspoons brown sugar

• 1 teaspoon salt

• ½ teaspoon black pepper

• 1 teaspoon ground allspice

• 1 teaspoon smoked paprika

• ½ teaspoon cayenne pepper (adjust for heat preference)

• ½ teaspoon ground cinnamon

• ½ teaspoon ground nutmeg

• 4 cloves garlic, minced

• 1-inch piece fresh ginger, grated

• 2 green onions, chopped

• 1 Scotch bonnet or habanero pepper, finely chopped (remove seeds for less heat)

• ½ teaspoon dried thyme (or 1 teaspoon fresh)

Instructions

1. Prepare the marinade: In a blender or food processor, combine all marinade ingredients until smooth.

2. Marinate the chicken: Place the drumsticks in a large bowl or zip-top bag. Pour the marinade over them, ensuring they’re well coated. Cover and refrigerate for at least 2 hours (overnight for best flavor).
