Ingredients

  • Jumbo pasta shells – 20-24 shells
  • Ground beef or turkey – 1 lb (450g)
  • Taco seasoning – 1 packet (or homemade blend)
  • Water – ½ cup
  • Cream cheese – 4 oz (softened)
  • Salsa – 1 cup
  • Shredded Mexican cheese blend – 1 ½ cups
  • Black beans or corn (optional) – ½ cup each
  • Chopped green onions or cilantro – for garnish

Instructions

1️⃣ Cook the Pasta

  • Boil jumbo pasta shells according to package instructions.
  • Drain and set aside to cool.

2️⃣ Prepare the Filling

  • In a large skillet, cook ground beef over medium heat until browned.
  • Drain excess fat, then add taco seasoning and ½ cup of water. Stir well.
  • Mix in cream cheese until melted and combined. Remove from heat.

3️⃣ Stuff the Shells

  • Spread ½ cup of salsa in a baking dish.
  • Fill each shell with the taco meat mixture and place in the dish.

4️⃣ Bake

  • Pour the remaining salsa over the shells.
  • Sprinkle shredded cheese on top.
  • Cover with foil and bake at 375°F (190°C) for 20 minutes.

5️⃣ Garnish & Serve

  • Remove foil, bake for another 5 minutes until cheese is bubbly.
  • Garnish with chopped green onions or cilantro.
  • Serve with sour cream, guacamole, or extra salsa.
