Ingredients
- Jumbo pasta shells – 20-24 shells
- Ground beef or turkey – 1 lb (450g)
- Taco seasoning – 1 packet (or homemade blend)
- Water – ½ cup
- Cream cheese – 4 oz (softened)
- Salsa – 1 cup
- Shredded Mexican cheese blend – 1 ½ cups
- Black beans or corn (optional) – ½ cup each
- Chopped green onions or cilantro – for garnish
Instructions
1️⃣ Cook the Pasta
- Boil jumbo pasta shells according to package instructions.
- Drain and set aside to cool.
2️⃣ Prepare the Filling
- In a large skillet, cook ground beef over medium heat until browned.
- Drain excess fat, then add taco seasoning and ½ cup of water. Stir well.
- Mix in cream cheese until melted and combined. Remove from heat.
3️⃣ Stuff the Shells
- Spread ½ cup of salsa in a baking dish.
- Fill each shell with the taco meat mixture and place in the dish.
4️⃣ Bake
- Pour the remaining salsa over the shells.
- Sprinkle shredded cheese on top.
- Cover with foil and bake at 375°F (190°C) for 20 minutes.
5️⃣ Garnish & Serve
- Remove foil, bake for another 5 minutes until cheese is bubbly.
- Garnish with chopped green onions or cilantro.
- Serve with sour cream, guacamole, or extra salsa.
