Ingredients
For the Chicken:
• 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
• 1/2 cup sweet chili sauce
• 1 tbsp soy sauce
• 1 tbsp honey
• 1 tsp garlic (minced)
• 1 tsp ginger (grated)
• 1 tbsp olive oil
For the Coconut Lime Drizzle:
• 1/2 cup coconut milk
• Zest of 1 lime
• Juice of 1 lime
• 1 tbsp honey
• 1/2 tsp salt
For the Bowl:
• 2 cups cooked jasmine rice (or brown rice/quinoa)
• 1 cup shredded red cabbage
• 1/2 cup shredded carrots
• 1/2 cup diced cucumber
• 1/4 cup chopped cilantro
• 1/4 cup chopped green onions
• 1 tbsp sesame seeds
Instructions
1. Marinate the Chicken:
• In a bowl, mix sweet chili sauce, soy sauce, honey, garlic, and ginger.
• Toss in the chicken and let marinate for at least 15 minutes.
2. Cook the Chicken:
• Heat olive oil in a skillet over medium heat.
• Add marinated chicken and cook for 5–7 minutes until caramelized and fully cooked.
3. Make the Coconut Lime Drizzle:
• In a small bowl, whisk together coconut milk, lime zest, lime juice, honey, and salt.
4. Assemble the Bowl:
• Divide cooked rice into bowls.
