Strawberry Tiramisu Recipe
Ingredients (Serves 6-8)
- For the Strawberry Layer:
- 2 cups fresh strawberries, hulled and sliced
- 2 tbsp sugar
- 1 tbsp lemon juice
- For the Cream Filling:
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- For Assembly:
- 1 cup strawberry puree (blend fresh strawberries with a little sugar)
- 1 package (about 24) ladyfinger cookies (savoiardi)
- Fresh strawberries for garnish
- Optional: Mint leaves for decoration
Instructions
- Prepare the Strawberry Layer:
- In a bowl, mix the sliced strawberries, sugar, and lemon juice. Let it sit for 15-20 minutes to macerate and release juices.
- Make the Cream Filling:
- In a large bowl, whisk the mascarpone cheese until smooth.
- In a separate bowl, whip the heavy cream with powdered sugar and vanilla until stiff peaks form.
- Gently fold the whipped cream into the mascarpone until fully combined.
- Prepare the Strawberry Puree:
- Blend fresh strawberries with a little sugar until smooth. Strain if you prefer a smoother texture.
- Assemble the Tiramisu:
- Dip each ladyfinger into the strawberry puree briefly (don’t soak them too much, or they’ll become soggy).
- Arrange a layer of dipped ladyfingers at the bottom of your serving dish.
- Spread half of the cream filling over the ladyfingers.
- Add a layer of macerated strawberries on top of the cream.
- Repeat with another layer of dipped ladyfingers, cream filling, and strawberries.
- Finish with a final layer of cream.
- Chill:
- Cover the tiramisu with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld.
- Serve:
- Before serving, garnish with fresh strawberry slices and mint leaves if desired.
- Dust with powdered sugar for an extra touch.
