Ingredients:
For the Cake:
• 1 box white or vanilla cake mix (or homemade vanilla cake)
• 1 cup fresh strawberries, finely chopped
• ¾ cup water (or milk for a richer cake)
• ⅓ cup vegetable oil
• 3 large eggs
• 1 tsp vanilla extract
For the Strawberry Glaze:
• 1 cup fresh strawberries, mashed or blended
• ½ cup powdered sugar
• 1 tbsp lemon juice
• 1 tsp cornstarch (optional, for thickening)
Instructions:
1. Preheat Oven: Set to 350°F (175°C). Grease and flour a 9×13-inch baking dish (or use two 8-inch round cake pans).
2. Prepare the Batter: In a large bowl, mix cake mix, water (or milk), oil, eggs, and vanilla until smooth. Gently fold in the chopped strawberries.
3. Bake: Pour batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely.
