Ingredients

For the Cake:

• 2 1/2 cups all-purpose flour

• 2 1/2 tsp baking powder

• 1/2 tsp salt

• 1 cup unsalted butter, softened

• 2 cups granulated sugar

• 4 large eggs

• 2 tsp vanilla extract

• 1/2 cup milk

• 1/2 cup strawberry puree (made from fresh or frozen strawberries)

• Optional: A few drops of pink food coloring for enhanced color

For the Frosting:

• 1 cup unsalted butter, softened

• 4 cups powdered sugar

• 1/4 cup strawberry puree

• 1 tsp vanilla extract

• Pinch of salt

Instructions

Step 1: Prepare the Cake Batter

1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.

2. In a bowl, whisk together the flour, baking powder, and salt.

3. In a large mixing bowl, cream the butter and sugar until light and fluffy.

4. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.

5. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Begin and end with the dry ingredients.

6. Fold in the strawberry puree and food coloring (if using) until evenly combined.

Step 2: Bake the Cake

1. Divide the batter evenly between the prepared cake pans.

2. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

3. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

Step 3: Make the Frosting

1. In a mixing bowl, beat the butter until smooth and creamy.

2. Gradually add the powdered sugar, mixing well after each addition.

3. Mix in the strawberry puree, vanilla extract, and salt until the frosting is smooth and fluffy.

Step 4: Assemble the Cake

1. Place one cake layer on a serving plate and spread a generous amount of frosting on top.

2. Place the second cake layer on top and frost the entire cake.

3. Decorate with fresh strawberries if desired.

Tips

• For extra strawberry flavor, add a few chopped strawberries between the layers.

• Store the cake in the refrigerator for up to 3 days, but bring it to room temperature before serving.
