Spicy Chicken Ramen Bowl with Creamy Sauce

Ingredients:

For the Ramen Bowl:

  • 2 boneless chicken thighs (or chicken breast, if preferred)
  • 2 packs of ramen noodles (preferably fresh, but instant works too)
  • 2 cups chicken broth
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 tablespoon rice vinegar
  • 1 teaspoon ginger (freshly grated)
  • 2 cloves garlic (minced)
  • 2 green onions (chopped)
  • 1/2 cup mushrooms (sliced)
  • 1/2 cup spinach (optional)
  • 1/2 teaspoon chili flakes (for extra heat)
  • 1 boiled egg (optional, for garnish)

For the Creamy Sauce:

  • 1/2 cup heavy cream or coconut milk
  • 2 tablespoons peanut butter or tahini (for richness)
  • 1 tablespoon soy sauce
  • 1 tablespoon sriracha (optional, for extra spice)
  • 1 teaspoon sesame oil
  • 1 teaspoon honey or brown sugar (optional, for sweetness)

Instructions:

  1. Cook the Chicken:
    • Heat a pan over medium-high heat and add a bit of oil.
    • Season the chicken thighs (or breasts) with salt and pepper and cook for about 4-5 minutes per side until golden and cooked through.
    • Let it rest for a couple of minutes, then slice it thinly.
  2. Prepare the Broth:
    • In a medium-sized pot, heat sesame oil over medium heat. Add the ginger, garlic, and chili flakes and sauté for 1 minute until fragrant.
    • Add the chicken broth, soy sauce, sriracha, and rice vinegar. Stir to combine and let the broth simmer for 5-10 minutes.
  3. Cook the Ramen:
    • Bring a separate pot of water to boil and cook the ramen noodles according to package instructions. Drain the noodles and set aside.
  4. Make the Creamy Sauce:
    • In a small saucepan, combine the heavy cream (or coconut milk), peanut butter (or tahini), soy sauce, sriracha, sesame oil, and honey (or sugar). Heat over low heat while stirring until everything is smooth and combined. Adjust the consistency by adding more cream if necessary.
  5. Assemble the Bowl:
    • Divide the cooked ramen noodles between bowls.
    • Pour the hot broth over the noodles.
    • Arrange the sliced chicken, mushrooms, and spinach (if using) on top of the noodles.
    • Drizzle the creamy sauce generously over the bowl.
    • Garnish with chopped green onions and a boiled egg, if desired.
