Southern Fried Salmon Patties

Ingredients:

• 1 (14.75 oz) can pink salmon, drained and flaked

• 1/4 cup onion, finely chopped

• 1/4 cup bell pepper, finely chopped (optional)

• 1/2 cup breadcrumbs or crushed saltine crackers

• 1 egg, beaten

• 2 tablespoons mayonnaise

• 1 teaspoon Worcestershire sauce

• 1 teaspoon Old Bay seasoning (or Cajun seasoning for a kick)

• 1/2 teaspoon garlic powder

• 1/2 teaspoon black pepper

• 1/4 teaspoon salt (adjust to taste)

• 1 tablespoon lemon juice

• 2 tablespoons fresh parsley, chopped (optional)

• 1/4 cup cornmeal (for extra crunch)

• 1/4 cup vegetable oil (for frying)

Instructions:

1. Prepare Mixture: In a mixing bowl, combine salmon, onion, bell pepper, breadcrumbs, egg, mayonnaise, Worcestershire sauce, Old Bay seasoning, garlic powder, black pepper, salt, lemon juice, and parsley. Stir until well combined.

2. Form Patties: Shape the mixture into small patties (about 2-3 inches wide). If the mixture is too wet, add a bit more breadcrumbs.

3. Coat in Cornmeal: Lightly coat each patty with cornmeal for extra crispiness.

4. Heat Oil: In a large skillet, heat vegetable oil over medium heat until shimmering.

5. Fry Patties: Fry the patties for 3-4 minutes per side until golden brown and crispy. Avoid overcrowding the pan.

6. Drain & Serve: Remove patties and drain on a paper towel-lined plate. Serve hot with tartar sauce, hot sauce, or a squeeze of fresh lemon.
