Ingredients:
• 1 (14 ¾ oz) can salmon (drained, bones removed)
• ¼ cup onion (finely chopped)
• ¼ cup cornmeal
• ¼ cup all-purpose flour
• 1 egg
• 3 tbsp mayonnaise
• ½ tsp salt
• ½ tsp black pepper
• ½ tsp garlic powder (optional)
• 1 tbsp lemon juice (optional)
• 2 tbsp oil (for frying)
Instructions:
1. Prepare the Mixture:
• In a bowl, mix together the canned salmon, chopped onion, cornmeal, flour, egg, mayonnaise, salt, and pepper.
• Stir until well combined. If the mixture is too wet, add a little more flour.
2. Shape the Patties:
• Form the mixture into small patties, about ½ inch thick.
3. Heat the Oil:
• In a skillet over medium heat, add oil and let it warm up.
4. Cook the Patties:
• Fry the patties for 3-4 minutes per side, until golden brown and crispy.
• Place them on a paper towel to drain excess oil.
5. Serve & Enjoy!
• Serve warm with tartar sauce, a squeeze of lemon, or a side of salad.
