Slow Cooker Creamy Potato Bacon Soup

A warm, comforting, and creamy soup packed with potatoes, crispy bacon, and flavorful seasonings!

Ingredients:

For the Soup:

• 6 medium russet potatoes, peeled and diced

• 1 medium onion, finely chopped

• 3 cloves garlic, minced

• 4 cups chicken broth

• 1 cup heavy cream (or whole milk)

• 1 cup shredded cheddar cheese

• ½ cup sour cream

• 6 slices bacon, cooked and crumbled

• 1 tsp salt (adjust to taste)

• ½ tsp black pepper

• ½ tsp paprika

• ½ tsp thyme (optional)

For Garnish (Optional):

• Extra crispy bacon

• Chopped green onions

• More cheddar cheese

Instructions:

Step 1: Prep & Cook in the Slow Cooker

1. Add potatoes, onion, garlic, chicken broth, salt, pepper, paprika, and thyme to the slow cooker.

2. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until the potatoes are soft.

Step 2: Blend for Creamy Texture

1. Use a potato masher for a chunky soup, or an immersion blender for a smoother consistency.

Step 3: Add Creamy Ingredients

1. Stir in heavy cream, sour cream, shredded cheese, and crumbled bacon.

2. Let cook for another 15-20 minutes until everything is well combined and heated through.

Step 4: Serve & Enjoy!

1. Ladle into bowls and top with extra bacon, green onions, and cheese.

2. Serve hot with crusty bread or crackers!
