Simple Vegetable Soup Recipe

Ingredients:

• 3 small potatoes

• 1 zucchini

• 1 carrot

• 1 onion

• A handful of fresh parsley

• Salt and pepper to taste

• 1-2 tablespoons olive oil

• 4-5 cups of water or vegetable broth

Instructions:

1. Prepare the Vegetables:

• Peel the potatoes, carrot, and onion.

• Chop the potatoes, carrot, zucchini, and onion into small cubes.

2. Cook the Vegetables:

• In a large pot, heat olive oil over medium heat. Add the chopped onion and carrot, and sauté for 3-4 minutes until they soften slightly.

• Add the chopped potatoes and zucchini to the pot and stir everything together.

3. Add Water/Broth:

• Pour in the water or vegetable broth to cover the vegetables.

• Add salt and pepper to taste.

4. Simmer:

• Bring the soup to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, or until all the vegetables are tender.

5. Add Parsley:

• Finely chop the parsley and add it to the soup during the last 5 minutes of cooking for added flavor.
