Savory Cajun Chicken over Creamy Parmesan Linguine

Ingredients:

For the Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 tbsp Cajun seasoning (store-bought or homemade)
  • 1 tbsp olive oil
  • 1 tbsp butter

For the Pasta:

  • 8 oz linguine
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 3/4 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Optional: pinch of red pepper flakes or extra Cajun seasoning

Instructions:

1. Cook the Pasta:

  • Boil linguine in salted water according to package directions. Drain and set aside, reserving about 1/2 cup pasta water.

2. Cook the Chicken:

  • Pat chicken dry and coat with Cajun seasoning on both sides.
  • Heat olive oil and butter in a skillet over medium-high heat.
  • Cook chicken for about 4โ€“5 minutes per side, or until cooked through and nicely browned. Remove and let rest.

3. Make the Sauce:

  • In the same skillet, reduce heat to medium and melt 2 tbsp butter.
  • Add garlic and sautรฉ for about 30 seconds.
  • Pour in heavy cream and stir until it starts to simmer.
  • Add Parmesan cheese and stir until smooth. If too thick, use some reserved pasta water to loosen it.
  • Season with salt, pepper, and a little extra Cajun seasoning or red pepper flakes if desired.

4. Combine & Serve:

  • Toss cooked linguine in the sauce until well coated.
  • Slice the rested Cajun chicken and place on top.
  • Garnish with extra Parmesan or parsley if desired.
