Savory Cajun Chicken over Creamy Parmesan Linguine
Ingredients:
For the Chicken:
- 2 boneless, skinless chicken breasts
- 1 tbsp Cajun seasoning (store-bought or homemade)
- 1 tbsp olive oil
- 1 tbsp butter
For the Pasta:
- 8 oz linguine
- 2 tbsp butter
- 2 cloves garlic, minced
- 1 cup heavy cream
- 3/4 cup grated Parmesan cheese
- Salt and black pepper, to taste
- Optional: pinch of red pepper flakes or extra Cajun seasoning
Instructions:
1. Cook the Pasta:
- Boil linguine in salted water according to package directions. Drain and set aside, reserving about 1/2 cup pasta water.
2. Cook the Chicken:
- Pat chicken dry and coat with Cajun seasoning on both sides.
- Heat olive oil and butter in a skillet over medium-high heat.
- Cook chicken for about 4โ5 minutes per side, or until cooked through and nicely browned. Remove and let rest.
3. Make the Sauce:
- In the same skillet, reduce heat to medium and melt 2 tbsp butter.
- Add garlic and sautรฉ for about 30 seconds.
- Pour in heavy cream and stir until it starts to simmer.
- Add Parmesan cheese and stir until smooth. If too thick, use some reserved pasta water to loosen it.
- Season with salt, pepper, and a little extra Cajun seasoning or red pepper flakes if desired.
4. Combine & Serve:
- Toss cooked linguine in the sauce until well coated.
- Slice the rested Cajun chicken and place on top.
- Garnish with extra Parmesan or parsley if desired.
