Sausage and Sauerkraut Skillet:

Ingredients:

  • 1 lb (450g) smoked sausage or kielbasa, sliced into 1/2-inch rounds
  • 1 tbsp olive oil (optional, for browning)
  • 1 medium onion, thinly sliced
  • 2 cups sauerkraut, drained (rinse lightly if you prefer less tangy)
  • 1 tsp caraway seeds (optional)
  • 1/2 tsp paprika
  • 1/4 tsp black pepper
  • 1/4 cup chicken broth or water
  • 1 apple, thinly sliced (optional, for a touch of sweetness)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook Sausage: Heat a large skillet over medium heat. Add the sausage slices and cook until browned, about 4–5 minutes per side. Remove and set aside. If the skillet is dry, add olive oil.
  2. Sauté Onion: In the same skillet, add the sliced onion and cook until softened, about 3 minutes.
  3. Add Sauerkraut and Spices: Stir in the sauerkraut, caraway seeds, paprika, and black pepper. Cook for 2–3 minutes to combine flavors.
  4. Deglaze: Add the chicken broth or water to deglaze the skillet, scraping up any browned bits.
  5. Combine Ingredients: Return the sausage to the skillet, and if using, add the apple slices. Stir to combine, then cover and cook on low heat for 10 minutes to blend flavors.
  6. Garnish and Serve: Sprinkle with fresh parsley before serving.

  • Serve with crusty bread, mashed potatoes, or over egg noodles for a hearty meal.
  • Pair with a crisp, cold beer or cider for a classic combo!
