Ingredients:
- 1 lb (450g) smoked sausage or kielbasa, sliced into 1/2-inch rounds

- 1/2 tsp paprika
- 1/4 tsp black pepper
- 1/4 cup chicken broth or water

Instructions:
- Cook Sausage: Heat a large skillet over medium heat. Add the sausage slices and cook until browned, about 4–5 minutes per side. Remove and set aside. If the skillet is dry, add olive oil.
- Sauté Onion: In the same skillet, add the sliced onion and cook until softened, about 3 minutes.
- Add Sauerkraut and Spices: Stir in the sauerkraut, caraway seeds, paprika, and black pepper. Cook for 2–3 minutes to combine flavors.
- Deglaze: Add the chicken broth or water to deglaze the skillet, scraping up any browned bits.
- Combine Ingredients: Return the sausage to the skillet, and if using, add the apple slices. Stir to combine, then cover and cook on low heat for 10 minutes to blend flavors.
- Garnish and Serve: Sprinkle with fresh parsley before serving.
