Ingredients:

• 2 large sweet potatoes, peeled and cut into 1-inch cubes

• 2 tbsp olive oil

• 1 tsp salt

• ½ tsp black pepper

• ½ tsp garlic powder (optional)

• ½ tsp paprika (optional, for extra flavor)

• 1 tbsp chopped fresh rosemary or thyme (optional)

Instructions:

1. Preheat oven to 425°F (220°C).

2. Prepare sweet potatoes – Peel and cut them into evenly sized cubes to ensure even roasting.

3. Season – In a large bowl, toss the sweet potatoes with olive oil, salt, pepper, garlic powder, paprika, and herbs if using.

4. Roast – Spread them in a single layer on a baking sheet lined with parchment paper.
