Here’s a classic Rich Butter Cake recipe—moist, buttery, and perfect on its own or as a base for layered cakes.
Rich Butter Cake Recipe
Ingredients:
- 1 cup (226g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 4 large eggs, room temperature
- 2 cups (240g) all-purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup (120ml) whole milk, room temperature
- 2 tsp vanilla extract
Optional Add-ins:
- Zest of 1 lemon or orange (for a citrus touch)
- 1/4 tsp almond extract (for a deeper flavor)
Instructions:
- Prep oven & pan:
Preheat oven to 350°F (175°C). Grease and line an 8-inch round or square cake pan. - Cream butter & sugar:
In a large bowl, beat butter and sugar together until light and fluffy (about 3-5 minutes). - Add eggs:
Add eggs one at a time, beating well after each addition. - Sift dry ingredients:
In a separate bowl, sift together flour, baking powder, and salt. - Combine wet & dry:
Add the flour mixture to the butter mixture in 3 parts, alternating with the milk (start and end with flour). Stir in vanilla extract (and zest or almond extract, if using). - Bake:
Pour the batter into the prepared pan. Tap the pan on the counter to release air bubbles.
Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean. - Cool:
Let the cake cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
