Poppy Seed Rolls Recipe

Ingredients

For the Dough:

  • 1 cup warm milk (110°F/45°C)
  • 2 ¼ teaspoons (1 packet) active dry yeast
  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, melted and slightly cooled
  • 2 large eggs
  • ½ teaspoon salt
  • 4 cups all-purpose flour (plus extra for dusting)

For the Poppy Seed Filling:

  • 1 cup poppy seeds
  • ½ cup granulated sugar
  • ¼ cup honey
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter

For Brushing:

  • 1 large egg, beaten
  • 1 tablespoon milk

Instructions

  1. Prepare the Dough:
    • In a small bowl, combine warm milk and yeast. Let it sit for 5-10 minutes until foamy.
    • In a large mixing bowl, whisk together sugar, melted butter, eggs, and salt. Add the yeast mixture and mix until combined.
    • Gradually add the flour, 1 cup at a time, mixing until a soft dough forms. Knead for 8-10 minutes until the dough is smooth and elastic.
    • Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
  2. Make the Poppy Seed Filling:
    • In a small saucepan, combine poppy seeds, sugar, honey, milk, and butter. Cook over medium heat, stirring constantly, until the mixture thickens (about 5 minutes).
    • Remove from heat, stir in vanilla, and let the mixture cool completely.
  3. Assemble the Rolls:
    • Punch down the risen dough and roll it out on a floured surface into a rectangle (about 12×18 inches).
    • Spread the cooled poppy seed filling evenly over the dough, leaving a 1-inch border along the edges.
    • Roll up the dough tightly, starting from one of the long edges, to form a log. Pinch the seam to seal.
    • Cut the log into 1-inch slices and place them on a greased or parchment-lined baking sheet, leaving space between rolls for expansion.
  4. Second Rise:
    • Cover the rolls loosely with plastic wrap and let them rise again for 30-45 minutes, until puffy.
  5. Bake the Rolls:
    • Preheat the oven to 350°F (175°C).
    • Mix the beaten egg and milk for the egg wash, then brush the tops of the rolls.
    • Bake for 20-25 minutes, or until golden brown.
  6. Serve:
    • Let the rolls cool slightly before serving. They’re delicious warm or at room temperature.
