Poor Man s Husband Casserole

Ingredients:

  • 1 pound ground beef (or turkey)
  • 1 medium onion, chopped
  • 2 cups frozen mixed vegetables (peas, corn, carrots)
  • 3 cups diced potatoes (or frozen hash browns)
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or your choice)
  • Optional: 1 can (15 oz) diced tomatoes, drained

Instructions:

  1. Preheat Oven:
    Preheat your oven to 350°F (175°C).
  2. Brown the Meat:
    In a large skillet over medium heat, cook the ground beef and chopped onion until the meat is browned and the onion is translucent. Drain excess fat if needed.
  3. Combine Ingredients:
    In a large bowl, mix the browned meat, frozen vegetables, diced potatoes, cream of mushroom soup, milk, garlic powder, paprika, salt, and pepper. If using, add the drained diced tomatoes.
  4. Transfer to Casserole Dish:
    Pour the mixture into a greased 9×13-inch casserole dish. Spread it evenly.
  5. Bake:
    Cover the dish with aluminum foil and bake for about 45 minutes.
  6. Add Cheese:
    Remove the foil, sprinkle shredded cheese on top, and return to the oven. Bake uncovered for another 10-15 minutes until the cheese is melted and bubbly.
  7. Cool and Serve:
    Allow the casserole to cool for a few minutes before serving. Enjoy!

Tips:

  • Feel free to customize with your favorite vegetables or add spices for extra flavor.
  • Leftovers can be stored in the refrigerator for a couple of days and reheated easily.
