Pineapple Bread
Ingredients:
• 2 cups all-purpose flour
• 1/2 cup granulated sugar
• 1/2 cup brown sugar
• 2 tsp baking powder
• 1/2 tsp baking soda
• 1/2 tsp salt
• 2 large eggs
• 1/2 cup vegetable oil (or melted butter)
• 1 tsp vanilla extract
• 1 can (8 oz) crushed pineapple, undrained
• 1/2 cup chopped nuts (optional – walnuts or pecans work great)
• 1/2 tsp cinnamon (optional)
Instructions:
1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
2. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and both sugars.
3. In another bowl, beat the eggs, then mix in oil, vanilla, and the entire can of crushed pineapple (with juice).
4. Combine wet and dry ingredients just until moistened — don’t overmix. Fold in nuts if using.
5. Pour batter into the prepared loaf pan and smooth the top.
6. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
