Ingredients

For the Crust:

• 1 ½ cups graham cracker crumbs

• ½ cup finely chopped pecans

• ¼ cup brown sugar

• 6 tbsp unsalted butter, melted

For the Cheesecake Layer:

• 2 (8 oz) packages cream cheese, softened

• ½ cup granulated sugar

• 2 large eggs

• 1 tsp vanilla extract

For the Pecan Topping:

• ½ cup brown sugar, packed

• ¼ cup light corn syrup (or maple syrup for extra flavor)

• ¼ cup unsalted butter

• 1 tsp vanilla extract

• 1 ½ cups chopped pecans

Instructions

Step 1: Prepare the Crust

1. Preheat oven to 350°F (175°C). Line an 8×8-inch or 9×9-inch baking pan with parchment paper.

2. In a bowl, mix graham cracker crumbs, chopped pecans, brown sugar, and melted butter.

3. Press the mixture firmly into the bottom of the pan.

4. Bake for 8 minutes, then let it cool slightly.

Step 2: Make the Cheesecake Layer

1. In a large bowl, beat cream cheese and sugar until smooth.

2. Add eggs one at a time, mixing well after each. Stir in vanilla.

3. Pour over the cooled crust and spread evenly.

4. Bake for 20-25 minutes, or until the center is just set.

Step 3: Make the Pecan Topping

1. In a small saucepan, melt butter over medium heat. Add brown sugar and corn syrup, stirring until smooth.

2. Bring to a gentle boil, then remove from heat and stir in vanilla and pecans.

3. Pour the topping over the baked cheesecake layer.

Step 4: Cool & Chill

• Let the bars cool to room temperature, then refrigerate for at least 2 hours (or overnight for best results).

• Once chilled, cut into squares and serve!
