Oven-Fried Stuffed Potatoes

Here’s a delicious Oven-Fried Stuffed Potatoes recipe that combines crispy baked potatoes with a savory, cheesy filling.

Ingredients

• 4 large russet potatoes

• 2 tablespoons olive oil

• ½ teaspoon salt

• ½ teaspoon black pepper

• ½ teaspoon garlic powder

• ½ teaspoon smoked paprika (optional)

For the Filling:

• ½ cup sour cream

• ½ cup shredded cheddar cheese

• ¼ cup cooked and crumbled bacon (optional)

• ¼ cup chopped green onions

• 2 tablespoons butter, melted

• Salt and pepper, to taste

Instructions

1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. Prepare the potatoes: Scrub the potatoes clean and pat them dry. Rub with olive oil, then sprinkle with salt, black pepper, garlic powder, and smoked paprika.

3. Bake: Place the potatoes directly on the oven rack and bake for about 45-50 minutes, or until they are fork-tender. Let them cool slightly.

4. Scoop out the insides: Cut the potatoes in half lengthwise and carefully scoop out the flesh, leaving a thin layer inside the skins to keep them sturdy.

5. Make the filling: Mash the scooped-out potato flesh in a bowl. Stir in sour cream, cheddar cheese, bacon (if using), green onions, melted butter, and season with salt and pepper.

6. Stuff and crisp: Spoon the filling back into the potato shells, mounding slightly. Place them back on the baking sheet and bake for another 15-20 minutes, or until golden and crispy on top.
