Ingredients (Serves 4)
For the Chicken:
• 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
• 1 tsp salt
• ½ tsp black pepper
• ½ tsp smoked paprika
• ½ tsp garlic powder
• 1 tbsp olive oil
For the Sauce:
• ½ cup BBQ sauce (use your favorite bold-flavored one)
• 2 tbsp honey
• 1 tbsp soy sauce
• 1 tsp apple cider vinegar
• 1 tsp hot sauce (optional, for extra heat)
For the Rice:
• 1 cup long-grain white rice
• 2 cups chicken broth (or water)
• ½ cup corn kernels (fresh, frozen, or canned)
• ½ cup black beans (optional, drained and rinsed)
• ½ tsp onion powder
• ½ tsp garlic powder
For Garnish:
• 2 green onions, chopped
• ½ cup shredded cheddar cheese (optional)
• Fresh cilantro (optional)
Instructions
1. Cook the Chicken:
• Heat olive oil in a large skillet or pan over medium heat.
• Season the chicken with salt, pepper, smoked paprika, and garlic powder.
• Cook for 5-7 minutes until browned and almost fully cooked. Remove and set aside.
2. Prepare the Sauce:
• In a small bowl, mix BBQ sauce, honey, soy sauce, vinegar, and hot sauce. Set aside.
3. Cook the Rice:
• In the same pan, add the rice, chicken broth, corn, black beans, onion powder, and garlic powder. Stir well.
• Bring to a boil, then reduce heat to low. Cover and simmer for about 15 minutes, stirring occasionally.
4. Combine Everything:
• Return the cooked chicken to the pan and pour the honey BBQ sauce over it.
• Stir well, cover, and let simmer for another 5 minutes, until the rice is fully cooked and the chicken is coated.
5. Final Touches:
• Sprinkle with green onions, cheese, or cilantro, if using.
• Serve hot and enjoy!
