No-Bake Peanut Butter Cheesecake Balls

Ingredients:

  • 8 oz (1 block) cream cheese, softened
  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar (or to taste)
  • 1 tsp vanilla extract
  • 1 1/2 cups crushed graham crackers or crushed cookies (like Nilla Wafers or digestives)
  • Optional: pinch of salt

For Coating (optional but delicious):

  • Melted chocolate (dark, milk, or white)
  • Crushed peanuts, graham crumbs, or mini chocolate chips

Instructions:

  1. Mix filling:
    In a large bowl, beat together cream cheese, peanut butter, powdered sugar, and vanilla until smooth and creamy.
  2. Add crumbs:
    Stir in crushed graham crackers or cookies until the mixture is thick and dough-like. (You should be able to roll it into balls. If it’s too soft, chill for 20–30 mins.)
  3. Roll into balls:
    Scoop and roll into 1-inch balls. Place on a parchment-lined tray.
  4. Chill:
    Refrigerate or freeze for 30 minutes until firm.
  5. Coat (optional):
    Dip in melted chocolate or roll in crushed peanuts, more crumbs, or cocoa powder.
  6. Serve or store:
    Keep refrigerated in an airtight container for up to 5 days, or freeze for longer.
