No-bake cherry cheesecake

Here’s a simple No-Bake Cherry Cheesecake recipe that is creamy, delicious, and easy to make!

Ingredients:

For the Crust:

• 1 ½ cups (150g) graham cracker crumbs (or digestive biscuits, crushed)

• ¼ cup (50g) melted butter

• 2 tbsp sugar (optional)

For the Cheesecake Filling:

• 8 oz (225g) cream cheese, softened

• 1 cup (240ml) heavy whipping cream (cold)

• ½ cup (60g) powdered sugar

• 1 tsp vanilla extract

• 1 tbsp lemon juice (optional, adds tanginess)

For the Topping:

• 1 can (21 oz or 600g) cherry pie filling

Instructions:

1️⃣ Make the Crust:

1. In a bowl, mix the crushed graham crackers with melted butter and sugar.

2. Press the mixture firmly into the bottom of a 9-inch springform pan or pie dish.

3. Refrigerate for at least 15-20 minutes to set while preparing the filling.

2️⃣ Make the Cheesecake Filling:

1. In a large bowl, beat the softened cream cheese until smooth and creamy.

2. Add powdered sugar, vanilla extract, and lemon juice. Mix until well combined.

3. In a separate bowl, whip the cold heavy cream until stiff peaks form.

4. Gently fold the whipped cream into the cream cheese mixture until smooth.

3️⃣ Assemble and Chill:

1. Spread the cheesecake filling evenly over the prepared crust.

2. Cover and refrigerate for at least 4-6 hours (overnight is best) to set.

4️⃣ Add the Cherry Topping:

1. Once set, spread the cherry pie filling over the cheesecake.

2. Slice, serve, and enjoy!
