Ingredients:
For the Base:
• 200g digestive biscuits (or graham crackers)
• 100g melted butter
For the Filling:
• 500g cream cheese (room temperature)
• 200ml heavy cream (cold)
• 150g white chocolate (melted)
• 100g powdered sugar
• 1 tsp vanilla extract
• 1 tbsp lemon juice
For Decoration:
• Whipped cream (for piping)
• Fresh berries (raspberries, blackberries, strawberries)
• Mint leaves (optional)
Instructions:
1. Prepare the Base:
• Crush the biscuits into fine crumbs and mix them with melted butter.
• Press the mixture into a springform pan (about 20 cm) and chill in the fridge for 30 minutes.
2. Make the Filling:
• In a large bowl, beat the cream cheese, powdered sugar, vanilla, and lemon juice until smooth.
• Whip the cold heavy cream separately until soft peaks form.
• Gently fold the whipped cream and melted white chocolate into the cream cheese mixture.
3. Assemble:
• Pour the filling over the chilled biscuit base and smooth the top.
• Refrigerate for at least 4 hours (preferably overnight) until set.
4. Decorate & Serve:
• Pipe whipped cream along the edges.
• Garnish with fresh berries and mint leaves.
• Slice and enjoy!
