Ingredients:

  • 16 large white mushrooms (stems removed and reserved)
  • 1 cup cooked crab meat (fresh or canned, drained)
  • 1/2 cup cream cheese (softened)
  • 1/4 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs (preferably panko for extra crunch)
  • 2 tablespoons butter (melted)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika (optional, for color)
  • Salt and pepper to taste
  • Fresh parsley (chopped, for garnish)

Instructions:

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the mushrooms: Clean the mushrooms by gently wiping them with a damp paper towel. Carefully remove the stems, leaving the mushroom caps intact. Finely chop the mushroom stems and set them aside.
  3. Make the crab stuffing: In a mixing bowl, combine the cooked crab meat, cream cheese, mayonnaise, Parmesan cheese, breadcrumbs, melted butter, lemon juice, garlic powder, onion powder, paprika, and the finely chopped mushroom stems.   4. Stuff the mushrooms: Spoon the crab mixture into each mushroom cap, pressing it down gently to pack it in.
  5. Bake the mushrooms: Arrange the stuffed mushrooms on the prepared baking sheet. Bake for 20-25 minutes, or until the mushrooms are tender and the stuffing is golden brown on top.
  6. Garnish and serve: Once baked, remove the mushrooms from the oven. Garnish with freshly chopped parsley before serving.
