Mexican Chicken Pinwheels

Here’s a delicious and easy Mexican Chicken Pinwheels recipe:

Ingredients:

• 2 cups cooked shredded chicken

• 8 oz cream cheese, softened

• 1/2 cup sour cream

• 1 cup shredded Mexican blend cheese

• 1/2 cup salsa

• 1/4 cup chopped fresh cilantro

• 1/2 tsp garlic powder

• 1/2 tsp onion powder

• 1/2 tsp chili powder

• 1/4 tsp cumin

• 1/4 tsp salt

• 4 large flour tortillas (burrito size)

Instructions:

1. Prepare the filling – In a large bowl, mix together the cream cheese, sour cream, shredded cheese, salsa, cilantro, and all the spices. Stir until smooth and well combined.

2. Add chicken – Fold in the shredded chicken and mix until evenly distributed.

3. Assemble pinwheels – Spread a thin, even layer of the mixture onto each tortilla, leaving about 1/2 inch around the edges.

4. Roll tightly – Roll each tortilla up tightly, then wrap in plastic wrap and refrigerate for at least 1 hour (this helps them hold their shape when slicing).

5. Slice & serve – Remove from the fridge, unwrap, and slice into 1-inch pinwheels. Arrange on a platter and serve chilled.
