Ingredients:

• 2 cups elbow macaroni, cooked & cooled

• ½ cup mayonnaise

• 1 tbsp yellow mustard (or Dijon for a twist)

• 1 tbsp apple cider vinegar (or pickle juice)

• 1 tsp sugar

• ½ tsp salt

• ¼ tsp black pepper

• ½ cup celery, finely diced

• ½ cup red bell pepper, diced

• ¼ cup red onion, finely chopped

• ⅓ cup dill pickles or sweet relish

• 2 hard-boiled eggs, chopped (optional)

• ¼ cup shredded cheddar cheese (optional)

Instructions:

1. Cook Macaroni: Boil the pasta until al dente. Drain and rinse with cold water to stop cooking. Set aside.

2. Make Dressing: In a large bowl, whisk together mayonnaise, mustard, vinegar, sugar, salt, and pepper.
