Irresistible Rotel Cream Cheese Sausage Balls

Ingredients:

1 lb (16 oz) pork sausage (spicy or mild, based on your preference)

8 oz cream cheese, softened

1 can (10 oz) Rotel diced tomatoes and green chilies, drained well

2 cups shredded sharp cheddar cheese

1 ½ cups Bisquick baking mix (or any all-purpose baking mix)

Instructions:

1. Preheat the Oven:

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or spray it with non-stick cooking spray.

2. Mix the Ingredients:

In a large mixing bowl, combine the sausage, softened cream cheese, drained Rotel, and shredded cheddar cheese. Mix well until all ingredients are evenly incorporated.

3. Add the Bisquick:

Gradually add the Bisquick baking mix into the sausage mixture, stirring until the dough forms. You can use your hands for easier mixing.

4. Shape the Balls:

Roll the mixture into 1-inch balls and place them evenly spaced on the prepared baking sheet.

5. Bake:

Bake for 20–25 minutes, or until the sausage balls are golden brown and cooked through.

6. Cool and Serve:

Let the sausage balls cool slightly before serving. Pair them with your favorite dipping sauce, such as ranch or spicy mayo.

Tips:

• To make them spicier, use hot sausage or add a pinch of cayenne pepper.

• Make sure to drain the Rotel well to avoid soggy sausage balls.

• These can be made ahead and frozen before baking. Bake directly from frozen for about 25–30 minutes.
