Iron Skillet Blackberry Cobbler Recipe
Ingredients
For the filling:
- 4 cups fresh or frozen blackberries
- ¾ cup granulated sugar (adjust to taste)
- 1 tablespoon lemon juice
- 2 tablespoons cornstarch (or flour for thickening)
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon (optional)
- 2 tablespoons butter (for greasing the skillet)
For the cobbler topping:
- 1 cup all-purpose flour
- ¾ cup granulated sugar
- 1½ teaspoons baking powder
- ½ teaspoon salt
- ¾ cup whole milk
- 6 tablespoons unsalted butter, melted
Instructions
- Preheat Oven: Set your oven to 375°F (190°C).
- Prepare the Skillet: Place 2 tablespoons of butter in a 10-inch cast iron skillet and heat it in the oven for about 5 minutes until melted. Remove from the oven.
- Make the Filling: In a bowl, mix blackberries, sugar, lemon juice, cornstarch, vanilla, and cinnamon. Stir well and set aside.
- Prepare the Batter: In another bowl, whisk together flour, sugar, baking powder, and salt. Add the milk and melted butter, stirring until smooth.
- Assemble the Cobbler: Pour the batter into the preheated skillet over the melted butter. Do not stir. Spoon the blackberry mixture evenly over the batter (the batter will rise around the fruit as it bakes).
- Bake: Place the skillet in the oven and bake for 35-45 minutes or until the top is golden brown and bubbly.
- Serve: Let it cool slightly before serving. Enjoy warm with a scoop of vanilla ice cream or whipped cream.
