Heavenly White Snack Cake
This light, fluffy, and perfectly sweet white snack cake is easy to make and perfect for any occasion!
Ingredients:
For the Cake:
• 2 ½ cups (315g) all-purpose flour
• 2 ½ tsp baking powder
• ½ tsp salt
• 1 cup (226g) unsalted butter, softened
• 1 ¾ cups (350g) granulated sugar
• 4 large egg whites
• 1 tbsp vanilla extract
• 1 cup (240ml) whole milk
For the Frosting:
• 1 cup (226g) unsalted butter, softened
• 4 cups (480g) powdered sugar
• 2 tbsp heavy cream or milk
• 1 tbsp vanilla extract
• Pinch of salt
Instructions:
Step 1: Preheat & Prepare
Preheat your oven to 350°F (175°C). Grease and line an 8×8 or 9×9-inch baking pan with parchment paper.
Step 2: Mix Dry Ingredients
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
Step 3: Cream Butter & Sugar
In a large mixing bowl, beat the butter and sugar together until light and fluffy (about 3-4 minutes).
Step 4: Add Egg Whites & Vanilla
Add the egg whites one at a time, beating well after each addition. Stir in the vanilla extract.
Step 5: Alternate Dry & Wet Ingredients
Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.
Step 6: Bake
Pour the batter into the prepared pan and smooth the top. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Step 7: Cool
Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Make the Frosting:
Step 8: Beat the Butter
In a large bowl, beat the butter until creamy.
Step 9: Add Sugar & Liquid
Gradually add powdered sugar, mixing well. Add vanilla extract, salt, and heavy cream (1 tbsp at a time) until the frosting is smooth and fluffy.
Assemble & Enjoy!
Step 10: Frost the Cake
Once the cake is fully cooled, spread the frosting evenly over the top. Slice and enjoy your Heavenly White Snack Cake!
