Hawaiian pineapple cake

Ingredients:

For the Cake:

2 cups all-purpose flour

2 cups granulated sugar

1 tsp baking soda

1/4 tsp salt

2 large eggs

1 tsp vanilla extract

1 (20 oz) can crushed pineapple (with juice, not drained)

For the Frosting:

1 (8 oz) package cream cheese (softened)

1/2 cup unsalted butter (softened)

1 tsp vanilla extract

2 cups powdered sugar

1/2 cup sweetened shredded coconut (optional, for garnish)

1/4 cup chopped pecans or walnuts (optional, for garnish)

Instructions:

Make the Cake:

1. Preheat the Oven

• Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.

2. Mix Dry Ingredients

• In a large mixing bowl, whisk together the flour, sugar, baking soda, and salt.

3. Add Wet Ingredients

• Add the eggs, vanilla extract, and crushed pineapple (with juice) to the dry ingredients. Mix until well combined; the batter will be thick.

4. Bake the Cake

• Pour the batter into the prepared baking pan. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.

• Let the cake cool completely in the pan before frosting.
