  • 4 boneless, skinless chicken thighs
  • 1 cup pineapple chunks (fresh or canned)
  • 1 bell pepper (any color), sliced
  • 1 red onion, sliced
  • 2 cups broccoli florets
  • 3 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon honey or brown sugar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated (optional)
  • Salt and pepper, to taste
  • Sesame seeds and chopped green onions for garnish (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Marinade: In a bowl, whisk together soy sauce, hoisin sauce, honey (or brown sugar), sesame oil, garlic, and ginger.
  3. Marinate the Chicken: Place the chicken thighs in a large resealable bag or a bowl. Pour half of the marinade over the chicken, ensuring each piece is coated. Let it marinate for at least 30 minutes (or up to overnight in the fridge for more flavor).
  4. Prepare the Vegetables: On a large sheet pan, spread the pineapple chunks, sliced bell pepper, red onion, and broccoli florets.
  5. Add the Chicken: Remove the chicken from the marinade and place it on the sheet pan with the vegetables. Drizzle the remaining marinade over the top of everything.
