Harry Potter Butterbeer Cupcakes

Ingredients (Makes about 12 cupcakes)

For the cupcakes:

• 1 ½ cups all-purpose flour

• 1 ½ tsp baking powder

• ½ tsp salt

• ½ cup unsalted butter, softened

• ¾ cup brown sugar

• 2 eggs

• 1 tsp vanilla extract

• 1 tsp butter extract (for that buttery flavor!)

• ½ cup cream soda (like A&W or IBC)

For the butterscotch filling:

• ½ cup butterscotch chips

• 2 tbsp heavy cream

For the butterbeer frosting:

• ½ cup unsalted butter, softened

• 1 cup powdered sugar

• ¼ cup butterscotch sauce (store-bought or homemade)

• ½ tsp butter extract

• 1-2 tbsp heavy cream (as needed for consistency)

Instructions

1. Preheat & Prepare:

• Preheat oven to 350°F (175°C) and line a cupcake tin with liners.

2. Make the cupcake batter:

• Whisk together flour, baking powder, and salt in a bowl.

• In another bowl, beat butter and brown sugar until fluffy.

• Add eggs, vanilla, and butter extract, mixing well.

• Alternately add the dry ingredients and cream soda, beginning and ending with dry ingredients.

3. Bake the cupcakes:

• Divide batter into cupcake liners (about ¾ full).

• Bake for 18-20 minutes, or until a toothpick comes out clean.

• Let cool completely.

• Melt butterscotch chips with heavy cream in the microwave in 15-second bursts, stirring until smooth.
