Great Traditional Cheesecake Recipe

Ingredients:

For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the filling:

  • 4 packages (8 oz each) cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • 3 large eggs
  • 1/4 cup heavy cream

For the topping (optional):

  • Whipped cream
  • Fresh berries (like strawberries or raspberries)

Instructions:

1. Prepare the Crust:

  • Preheat your oven to 325°F (163°C).
  • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the mixture resembles wet sand.
  • Press the mixture into the bottom of a 9-inch springform pan, using the back of a spoon to compact it evenly.
  • Bake the crust for 8-10 minutes until it’s golden brown. Remove from the oven and set aside to cool.

2. Prepare the Filling:

  • In a large mixing bowl, beat the softened cream cheese until smooth and creamy using an electric mixer on medium speed.
  • Gradually add the sugar and vanilla extract, mixing until well combined.
  • Add the sour cream and mix until smooth.
  • Add the eggs one at a time, mixing well after each addition.
  • Finally, stir in the heavy cream until the mixture is smooth and creamy.

3. Bake the Cheesecake:

  • Pour the cheesecake batter over the cooled crust in the springform pan.
  • Tap the pan gently on the counter to release any air bubbles.
  • Place the pan on a baking sheet and bake in the preheated oven for 55-65 minutes, or until the edges are set, and the center is slightly jiggly but firm.
  • Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour to prevent cracking.

4. Chill the Cheesecake:

  • After the cheesecake has cooled, cover it with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to set and firm up.

5. Serve:

  • Once chilled, remove the cheesecake from the springform pan.
  • Optionally, top with whipped cream and fresh berries for a delicious finishing touch.
