German  Potato Pancakes

Ingredients:

• 4 large potatoes (russet or Yukon Gold), peeled

• 1 small onion, finely grated

• 2 eggs, beaten

• ¼ cup all-purpose flour

• 1 teaspoon salt

• ½ teaspoon black pepper

• ¼ teaspoon nutmeg (optional)

• ¼ cup vegetable oil (for frying)

• Sour cream or applesauce (for serving)

Instructions:

1. Grate the Potatoes:

• Using a box grater or food processor, grate the potatoes finely.

• Place the grated potatoes in a clean kitchen towel and squeeze out as much moisture as possible.

2. Mix the Batter:

• In a large bowl, combine the grated potatoes, grated onion, eggs, flour, salt, pepper, and nutmeg.

• Stir until well combined.

3. Heat the Oil:

• Heat ¼ cup vegetable oil in a large skillet over medium-high heat.

4. Fry the Pancakes:

• Scoop about ¼ cup of the potato mixture and flatten it into a pancake shape.

• Fry for 3–4 minutes per side, until golden brown and crispy.

• Remove and drain on a paper towel-lined plate.

5. Serve:

• Serve warm with sour cream or applesauce for a traditional German touch!
