Garlic Chicken Fried Rice
Ingredients
• 2 cups cooked rice (preferably day-old rice)
• 200g boneless chicken (cut into small pieces)
• 2 tbsp oil (vegetable or sesame oil)
• 6–8 garlic cloves (finely chopped)
• 1 small onion (finely chopped)
• 1/2 cup mixed vegetables (carrots, peas, bell peppers, optional)
• 2 tbsp soy sauce
• 1 tbsp oyster sauce (optional, for extra flavor)
• 1/2 tsp black pepper
• 1/2 tsp salt (adjust to taste)
• 1/2 tsp red chili flakes (optional, for a spicy kick)
• 1 egg (optional, scrambled)
• 1 spring onion (chopped, for garnish)
Instructions
1. Cook the Chicken – Heat 1 tbsp oil in a pan, add chopped garlic, and sauté until golden brown. Add the chicken, season with a little salt and black pepper, and cook until fully done. Remove and set aside.
2. Prepare the Fried Rice – In the same pan, add the remaining oil, then sauté the onion until soft. Add mixed vegetables (if using) and stir-fry for 2 minutes.
3. Add the Egg (Optional) – Push the veggies to one side, add a beaten egg, and scramble it until fully cooked.
4. Mix in the Rice & Chicken – Add the cooked rice, followed by the fried chicken. Pour in soy sauce, oyster sauce, black pepper, and chili flakes. Stir-fry everything together on high heat for 2–3 minutes.
5. Final Touch – Adjust seasoning, garnish with spring onions, and serve hot!
