Absolutely! Here’s a classic, super easy Forgotten Chicken recipe — named because you can “forget” it in the oven while it does all the work!

Forgotten Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 cup long grain uncooked white rice (not instant)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) cream of chicken soup
  • 1 1/4 cups water or chicken broth
  • 1 packet dry onion soup mix (like Lipton)
  • Salt & pepper to taste

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a greased 9×13 baking dish, spread the uncooked rice evenly on the bottom.
  3. In a bowl, mix together the cream of mushroom soup, cream of chicken soup, and water (or broth). Pour mixture over the rice and gently stir to distribute.
  4. Place chicken breasts on top of the rice mixture. Season with salt and pepper.
  5. Sprinkle dry onion soup mix evenly over the top.
  6. Cover tightly with foil and bake for 1 hour and 30 minutes — do not uncover while baking.
  7. After baking, remove from oven, uncover, and let sit for a few minutes before serving.

Tips:

  • You can add sliced mushrooms, broccoli, or peas for extra flavor.
  • For extra creaminess, stir in 1/4 cup sour cream after baking.
