Absolutely! Here’s a classic, super easy Forgotten Chicken recipe — named because you can “forget” it in the oven while it does all the work!
Forgotten Chicken
Ingredients:
- 4 boneless, skinless chicken breasts (or thighs)
- 1 cup long grain uncooked white rice (not instant)
- 1 can (10.5 oz) cream of mushroom soup
- 1 can (10.5 oz) cream of chicken soup
- 1 1/4 cups water or chicken broth
- 1 packet dry onion soup mix (like Lipton)
- Salt & pepper to taste
Instructions:
- Preheat oven to 350°F (175°C).
- In a greased 9×13 baking dish, spread the uncooked rice evenly on the bottom.
- In a bowl, mix together the cream of mushroom soup, cream of chicken soup, and water (or broth). Pour mixture over the rice and gently stir to distribute.
- Place chicken breasts on top of the rice mixture. Season with salt and pepper.
- Sprinkle dry onion soup mix evenly over the top.
- Cover tightly with foil and bake for 1 hour and 30 minutes — do not uncover while baking.
- After baking, remove from oven, uncover, and let sit for a few minutes before serving.
Tips:
- You can add sliced mushrooms, broccoli, or peas for extra flavor.
- For extra creaminess, stir in 1/4 cup sour cream after baking.
