FILIPINO STAR BREAD (Putok Bread)
Ingredients
For the Dough:
3 cups all-purpose flour
1/4 cup sugar
1/2 tsp salt
2 1/4 tsp instant yeast (1 packet)
1/2 cup warm milk
1/4 cup warm water
1/4 cup unsalted butter, melted
1 large egg
For the Topping:
1/4 cup sugar
1/4 cup flour
2 tbsp melted butter
Egg wash (1 egg beaten with 1 tbsp milk)
Instructions
- Prepare the Dough:
- In a small bowl, combine warm milk, water, and sugar. Sprinkle the yeast over it and let it sit for 5 minutes until frothy.
- In a large bowl, mix flour and salt. Add the yeast mixture, melted butter, and egg.
- Knead the dough for 8–10 minutes until smooth and elastic.
- Cover the dough with a damp cloth and let it rise in a warm place for 1–2 hours, or until doubled in size.
- Shape the Putok:
- Punch down the dough and divide it into 8–10 equal portions.
- Shape each portion into a smooth ball. Place them on a greased baking tray, leaving enough space between them.
- Use a sharp knife or scissors to make a cross or “X” on top of each ball.
- Cover and let the dough rise again for 30–45 minutes.
- Prepare the Topping:
- In a small bowl, mix sugar, flour, and melted butter until crumbly. Set aside.
- Bake the Putok:
- Preheat your oven to 350°F (175°C).
- Brush the top of each dough ball with egg wash.
- Sprinkle the crumbly topping over the “X” marks.
- Bake for 15–18 minutes, or until golden brown.
