Here’s an easy Burrito Casserole recipe that’s delicious and simple to make!
Ingredients:
• 1 lb (450g) ground beef
• 1 small onion, chopped
• 1 packet taco seasoning
• 1 can (10 oz) diced tomatoes with green chilies (like Rotel)
• 1 can (16 oz) refried beans
• 1 cup sour cream
• 2 cups shredded cheese (cheddar or Mexican blend)
• 4 large flour tortillas
Instructions:
1. Preheat oven to 375°F (190°C). Grease a baking dish (9×13 inches).
2. Cook the beef & onion in a pan over medium heat until browned. Drain excess fat.
3. Add taco seasoning & tomatoes (with juice). Stir and let simmer for 5 minutes.
4. Layer the casserole:
• Spread a little meat mixture on the bottom of the dish.
• Place 2 tortillas over it (cut to fit if needed).
• Spread half the refried beans, half the sour cream, and half the meat mixture.
• Sprinkle with some cheese.
• Repeat layers with remaining tortillas, beans, sour cream, and meat.
5. Top with cheese and cover with foil.
6. Bake for 20 minutes, then uncover and bake for another 10 minutes until cheese is bubbly.
7. Let rest for 5 minutes, then slice and enjoy!
