Double Chocolate Coca-Cola Cake:
Ingredients:
For the cake:
- 1 cup Coca-Cola (regular, not diet)
- 1/2 cup vegetable oil
- 1/2 cup butter
- 3 tablespoons cocoa powder
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
For the frosting:
- 1/2 cup butter
- 3 tablespoons cocoa powder
- 1/4 cup Coca-Cola (regular)
- 3 1/2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 cup mini chocolate chips (optional)
Instructions:
For the cake:
- Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a medium saucepan, combine the Coca-Cola, vegetable oil, butter, and cocoa powder. Bring to a boil over medium heat, stirring frequently. Once it reaches a boil, remove from heat and set aside.
- In a large bowl, whisk together the flour, sugar, baking soda, and salt.
- Pour the wet mixture into the dry ingredients and stir until combined.
- Add the eggs, sour cream, and vanilla extract. Mix well until smooth and fully incorporated.
- Pour the batter into the prepared baking pan.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Remove from the oven and allow the cake to cool in the pan while you prepare the frosting.
For the frosting:
- In a saucepan, melt the butter over medium heat.
- Stir in the cocoa powder and Coca-Cola. Bring to a simmer, and let it cook for 1-2 minutes, stirring constantly.
- Remove from heat and whisk in the powdered sugar and vanilla extract until smooth and glossy.
- Immediately pour the frosting over the cooled cake, spreading it out evenly.
- If desired, sprinkle the top with mini chocolate chips while the frosting is still warm.
