Ingredients:
• 2 packages (8 oz each) cream cheese, softened
• 1 can (8 oz) crushed pineapple, drained well
• ½ cup finely chopped bell pepper (red or green)
• ¼ cup finely chopped green onions
• ½ tsp garlic powder
• ½ tsp onion powder
• ½ tsp salt
• ½ cup chopped pecans (for coating)
• ¼ cup shredded coconut (optional, for extra tropical flavor)
Instructions:
1. Mix the Ingredients
• In a large bowl, mix cream cheese, crushed pineapple, bell pepper, green onions, garlic powder, onion powder, and salt until smooth and well combined.
2. Shape the Cheeseball
• Scoop the mixture onto a piece of plastic wrap.
• Shape it into a ball, then wrap tightly and refrigerate for at least 1-2 hours (or overnight) to firm up.
3. Coat with Pecans
• Spread the chopped pecans (and coconut, if using) on a plate.
• Roll the chilled cheeseball in the pecans, pressing gently so they stick.
4. Serve & Enjoy!
• Place the cheeseball on a serving plate and pair with crackers, pretzels, or veggies.
