Crockpot Potato and Hamburger Soup
Serves: 6-8
Prep Time: 15 minutes
Cook Time: 6-8 hours on low or 3-4 hours on high
Ingredients
- 1 lb ground beef (or ground turkey)
- 6 medium potatoes, peeled and diced
- 3 cups chicken or beef broth
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups milk
- 1 cup shredded cheddar cheese
- 1/4 cup sour cream
- 1 teaspoon smoked paprika (optional)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons all-purpose flour (for thickening, optional)
- 1 tablespoon olive oil (optional, for sautéing)
Optional Toppings:
- Crispy bacon bits
- Green onions, chopped
- Additional shredded cheese
Instructions
- Brown the Ground Beef:
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat and set aside.
- Assemble in the Crockpot:
- Add the diced potatoes, browned ground beef, onion, garlic, broth, salt, pepper, and smoked paprika (if using) to the crockpot. Stir to combine.
- Cook:
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until the potatoes are tender.
- Thicken the Soup (Optional):
- If you prefer a thicker soup, whisk the flour into 1/4 cup of the milk until smooth. Stir this mixture into the soup during the last 30 minutes of cooking.
- Add Creaminess:
- During the final 30 minutes of cooking, stir in the remaining milk, shredded cheese, and sour cream. Mix well until the cheese is melted and the soup is creamy.
- Serve:
- Ladle the soup into bowls and top with crispy bacon bits, green onions, or extra cheese if desired. Serve with crusty bread or crackers on the side.
Tips:
- For added flavor, sauté the onions and garlic in olive oil before adding them to the crockpot.
- Use Yukon Gold potatoes for a creamier texture or Russet potatoes for a heartier bite.
- Substitute milk with heavy cream for a richer soup.
Enjoy this warm and comforting crockpot soup—it’s perfect for chilly days! 😊
