Crockpot Pierogi Casserole with Kielbasa

Ingredients:

  • 1 package (16 oz) frozen pierogi (potato and cheese are great choices)
  • 1 lb kielbasa (sliced)
  • 1 onion (diced)
  • 4 cups sauerkraut (drained, optional)
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • Salt and pepper (to taste)
  • 2 tablespoons olive oil
  • Chopped fresh parsley (for garnish)

Instructions:

  1. Prep the Slow Cooker:
  • Lightly grease the inside of your crockpot with cooking spray or olive oil.
  1. Layer Ingredients:
  • Place half of the frozen pierogi in the bottom of the crockpot.
  • Add half of the sliced kielbasa, half of the diced onion, and half of the sauerkraut (if using).
  • Sprinkle with 1 cup of cheddar cheese.
  1. Add Seasonings:
  • In a bowl, mix the chicken broth, sour cream, garlic powder, and a pinch of salt and pepper. Pour half of this mixture over the layered ingredients in the crockpot.
  1. Repeat Layers:
  • Repeat the layering process with the remaining pierogi, kielbasa, onion, sauerkraut, and another cup of cheddar cheese.
  • Pour the remaining sour cream mixture on top.
  1. Cook:
  • Cover and cook on low for 6-7 hours, or on high for 3-4 hours, until the pierogi are cooked through and heated.
  1. Finish:
  • About 30 minutes before serving, sprinkle the remaining cheese on top. Cover and allow the cheese to melt.
  1. Serve:
  • Once cooked, serve hot, garnished with fresh parsley if desired.
