Ingredients:
- 1 package (16 oz) frozen pierogi (potato and cheese are great choices)
- 1 lb kielbasa (sliced)
- 1 onion (diced)
- 4 cups sauerkraut (drained, optional)
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 cup chicken broth
- 1 teaspoon garlic powder
- Salt and pepper (to taste)
- 2 tablespoons olive oil
- Chopped fresh parsley (for garnish)
Instructions:
- Prep the Slow Cooker:
- Lightly grease the inside of your crockpot with cooking spray or olive oil.
- Layer Ingredients:
- Place half of the frozen pierogi in the bottom of the crockpot.
- Add half of the sliced kielbasa, half of the diced onion, and half of the sauerkraut (if using).
- Sprinkle with 1 cup of cheddar cheese.
- Add Seasonings:
- In a bowl, mix the chicken broth, sour cream, garlic powder, and a pinch of salt and pepper. Pour half of this mixture over the layered ingredients in the crockpot.
- Repeat Layers:
- Repeat the layering process with the remaining pierogi, kielbasa, onion, sauerkraut, and another cup of cheddar cheese.
- Pour the remaining sour cream mixture on top.
- Cook:
- Cover and cook on low for 6-7 hours, or on high for 3-4 hours, until the pierogi are cooked through and heated.
- Finish:
- About 30 minutes before serving, sprinkle the remaining cheese on top. Cover and allow the cheese to melt.
- Serve:
- Once cooked, serve hot, garnished with fresh parsley if desired.
