Ingredients:
- 1 pound dried Great Northern beans (rinsed and sorted)
- 6 cups water or chicken broth
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 bay leaves
- 1 teaspoon salt (add toward the end of cooking)
- 1/2 teaspoon black pepper
- Optional:
- 1 smoked ham hock or 4 slices of bacon (for added flavor)
- 1 teaspoon smoked paprika (for a smoky taste)
- 1/2 teaspoon cayenne pepper (for a spicy kick)
Instructions:
- Prep the Beans
- Place the beans in a large bowl, cover with water, and soak overnight.
- Alternatively, use the quick soak method: Bring beans to a boil in water, boil for 2 minutes, then remove from heat and let sit for 1 hour. Drain and rinse.
- Assemble in the Crock Pot
- Add the beans, water or chicken broth, diced onion, minced garlic, and bay leaves to the Crock Pot.
- If using, add the smoked ham hock or bacon for flavor.
- Cook the Beans
- Cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours, until the beans are tender.
- Check occasionally and add more water or broth if needed to keep the beans covered.
- Season to Taste
- Once the beans are tender, remove the bay leaves and the ham hock (if used).
- Add salt, pepper, and any additional seasonings like paprika or cayenne. Stir well.
- Serve
- Enjoy as a side dish, or serve over rice for a hearty meal.
- Garnish with fresh parsley or green onions, if desired.
Tips:
- For a Creamier Texture: Use a wooden spoon to mash some of the beans against the side of the Crock Pot.
- Leftovers: Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
Enjoy your comforting Crock Pot Great Northern Beans! 😊
