CRISPY CHICKEN WITH CREAMY

Here’s a delicious recipe for crispy chicken with creamy pasta that’s sure to satisfy!

Ingredients:

For the Crispy Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (Panko for extra crunch)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Vegetable oil for frying

For the Creamy Pasta:

  • 8 oz fettuccine or pasta of choice
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

Crispy Chicken:

  1. Prepare the chicken:
  • Pound the chicken breasts to an even thickness for even cooking. Season with salt and pepper.
  1. Setup the breading station:
  • In three shallow bowls, set up the flour with salt, pepper, garlic powder, and paprika in one, whisked eggs in another, and breadcrumbs in the third.
  1. Bread the chicken:
  • Dredge each chicken breast in flour, shaking off excess. Dip in eggs, and finally coat in breadcrumbs.
  1. Fry the chicken:
  • Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat. Fry the chicken for about 5-7 minutes on each side or until golden brown and cooked through. Remove and place on paper towels to drain.

Creamy Pasta:

  1. Cook the pasta:
  • In a large pot of salted boiling water, cook the pasta according to package instructions. Reserve 1/2 cup of pasta water, then drain.
  1. Make the sauce:
  • In the same pot, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  • Pour in the heavy cream, and stir in the Parmesan cheese. Season with salt and pepper. If the sauce is too thick, add reserved pasta water until desired consistency is reached.
  1. Combine:
  • Add the drained pasta to the creamy sauce and toss until well coated.

Serve:

  1. Plate the dish:
  • Serve a generous portion of creamy pasta on a plate, topped with crispy chicken. Garnish with fresh parsley and additional Parmesan, if desired.
