Crab and Shrimp  Seafood Bisque

Crab and Shrimp Seafood Bisque

Ingredients:

• 2 tablespoons butter

• 1 small onion, finely chopped

• 1 small carrot, finely grated

• 1 small celery stalk, finely chopped

• 2 cloves garlic, minced

• 2 tablespoons all-purpose flour

• 2 cups seafood stock (or chicken stock)

• 1 cup heavy cream

• ½ cup dry white wine (optional)

• ½ teaspoon Old Bay seasoning

• ½ teaspoon paprika

• ¼ teaspoon cayenne pepper (optional, for spice)

• Salt and black pepper to taste

• ½ pound shrimp, peeled, deveined, and chopped

• ½ pound lump crab meat

• 2 tablespoons tomato paste

• 2 tablespoons cream cheese (optional, for extra richness)

• 1 tablespoon Worcestershire sauce

• 1 tablespoon fresh lemon juice

• 2 tablespoons fresh parsley, chopped

Instructions:

1. Sauté the Aromatics

• In a large pot, melt butter over medium heat.

• Add onion, carrot, and celery. Sauté for 3–4 minutes until softened.

• Stir in garlic and cook for another 30 seconds.

2. Make the Base

• Sprinkle in the flour and stir for 1–2 minutes to cook out the raw taste.

• Slowly whisk in seafood stock and white wine (if using), stirring continuously.

3. Add Creamy Elements & Seasonings

• Stir in heavy cream, tomato paste, Worcestershire sauce, Old Bay seasoning, paprika, cayenne, salt, and black pepper.

• Simmer for about 10 minutes, stirring occasionally.

4. Add Seafood

• Reduce heat to low and add shrimp and crab meat.

• Cook for 5–7 minutes until shrimp is fully cooked.

• Stir in cream cheese (if using) and lemon juice.

5. Finish & Serve

• Taste and adjust seasoning if needed.

• Garnish with fresh parsley.

• Serve hot with crusty bread or oyster crackers.
