Ingredients
For the bread:
- 1 cup all-purpose flour
- 1 cup granulated sugar
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- 2 large eggs
- ½ teaspoon vanilla extract
- ½ teaspoon lemon extract
- Zest of 1 lemon
- ½ cup buttermilk (or milk with 1 teaspoon vinegar added)
For the lemon glaze:
- 1 cup powdered sugar
- 2 tablespoons fresh lemon juice
- Zest of 1 lemon (optional)
Instructions
- Preheat the oven:
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- Mix dry ingredients:
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- Mix wet ingredients:
- In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Add the eggs, one at a time, mixing well after each addition. Then stir in the vanilla extract, lemon extract, and lemon zest.
- Combine ingredients:
- Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the flour mixture, mixing until just combined.
- Bake:
- Pour the batter into the prepared loaf pan and smooth the top. Bake for about 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool:
- Allow the lemon bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
- Prepare the glaze:
- In a small bowl, whisk together powdered sugar and lemon juice until smooth. If desired, add lemon zest for extra flavor.
- Glaze the bread:
- Once the bread is completely cool, drizzle the glaze over the top.
