COPYCAT OF STARdUCKS LEMON

Ingredients

For the bread:

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ teaspoon vanilla extract
  • ½ teaspoon lemon extract
  • Zest of 1 lemon
  • ½ cup buttermilk (or milk with 1 teaspoon vinegar added)

For the lemon glaze:

  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice
  • Zest of 1 lemon (optional)

Instructions

  1. Preheat the oven:
  • Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  1. Mix dry ingredients:
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  1. Mix wet ingredients:
  • In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  • Add the eggs, one at a time, mixing well after each addition. Then stir in the vanilla extract, lemon extract, and lemon zest.
  1. Combine ingredients:
  • Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the flour mixture, mixing until just combined.
  1. Bake:
  • Pour the batter into the prepared loaf pan and smooth the top. Bake for about 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  1. Cool:
  • Allow the lemon bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  1. Prepare the glaze:
  • In a small bowl, whisk together powdered sugar and lemon juice until smooth. If desired, add lemon zest for extra flavor.
  1. Glaze the bread:
  • Once the bread is completely cool, drizzle the glaze over the top.
  1. Serve:
