Here’s a delicious recipe for Condensed Milk & Coconut Koeksisters — a twist on the traditional South African treat, using sweetened condensed milk and coconut for a soft, cake-like version (not the syrup-soaked braided one):

Condensed Milk & Coconut Koeksisters

(Makes about 24 small koeksisters)

Ingredients:

  • 1 can (397g / 14 oz) sweetened condensed milk
  • 2 cups desiccated coconut (plus extra for coating)
  • 2 cups self-raising flour
  • 1 tsp vanilla essence
  • 1/2 tsp salt
  • Oil for deep frying

Instructions:

  1. Mix the dough:
    In a large bowl, combine the condensed milk, coconut, self-raising flour, vanilla essence, and salt. Mix until it forms a soft dough. It should be firm but not dry — add a tablespoon or two of milk if needed.
  2. Shape the koeksisters:
    Roll into small sausage shapes or balls (about the size of a golf ball).
  3. Heat the oil:
    In a deep pot, heat oil to medium heat (about 170–180°C / 340–360°F). Test with a small piece of dough — it should sizzle and rise to the top.
  4. Fry in batches:
    Fry the koeksisters until golden brown, turning gently to brown evenly. This usually takes about 3–4 minutes per batch.
  5. Drain and roll in coconut:
    Remove and drain on paper towels. While still warm, roll in extra desiccated coconut to coat.
  6. Cool and enjoy:
    Serve warm or at room temperature. Store in an airtight container for a few days.
