Condensed Milk & Coconut Koeksisters
(Makes about 24 small koeksisters)
Ingredients:
- 1 can (397g / 14 oz) sweetened condensed milk
- 2 cups desiccated coconut (plus extra for coating)
- 2 cups self-raising flour
- 1 tsp vanilla essence
- 1/2 tsp salt
- Oil for deep frying
Instructions:
- Mix the dough:
In a large bowl, combine the condensed milk, coconut, self-raising flour, vanilla essence, and salt. Mix until it forms a soft dough. It should be firm but not dry — add a tablespoon or two of milk if needed. - Shape the koeksisters:
Roll into small sausage shapes or balls (about the size of a golf ball). - Heat the oil:
